Great-Grandma Hudak’s Recipe for Veal or Chicken Paprikash

Dumplings

Ingredients:

1-1/2 Cups of flour

2 cups Farina

3 Eggs

1 stick butter

1-1/2 tablespoon salt

Milk (as needed)

1. Blend flour and Farina with salt

2. Melt butter

3. Beat eggs

4. Add melted butter and eggs to farina mixture

5. Mix with spoon

6. Add milk a little at a time until it is putty texture

7. Drop by ½ teaspoon fill into kettle of boiling water

8. Cook 15 minutes

9. Rinse dumplings in colander

Paprikash

Ingredients:

4 Lbs of boneless veal rump (or chicken) cut into cubes

3 cups chopped onions

1 stick margarine

5 tablespoons of paprika

3/4 Pound mushrooms

1-1/2 cup half-and-half

2 cans of beef broth

1. Take the skin off veal or chicken

2. Sprinkle paprika onto meat and put seasoned veal or chicken into fry pan

3. Brown veal or chicken in oil

4. Put veal/chicken in crockpot with enough beef broth to cover and cook 4-6 hours or until fork tender

5. In a large saucepan add butter and flour, stir until incorporated

6. Add onions, mushrooms, salt, pepper, and leftover paprika, cook until tender

7. Add half-and-half, boil 5 minutes

8. Simmer 20-30 minutes, stirring occasionally

9. Once veal is ready, drain broth and add mushroom and onion mixture to crock pot

10. Add water if needed (abt 1 cup may be needed)

11. Mix and simmer on low

12. Add dumplings and simmer about ½ hour
